Leg of Lamb Roast


Contrary to popular belief, we do Roasts including Leg of Lamb. As we enjoy the flavour of spices and garlic, we include these in our roasts. Here is a really good recipe from my aunt in Narowal.

Ingredients

2 - 3 lb whole leg of lamb
2 tsp salt
2 tbs garam masala
2 tbs red chillie flakes
2 tbs freshly ground garlic
2 tbs freshly groung ginger
4 tbs tomato puree

Method
  1. Pierce lamb leg all over with a knife or fork.
  2. Mix all other ingredients in a bowl.
  3. Apply to the leg of lamb and keep covered in a refrigerator for 24 hours or longer.
  4. Cover tightly with aluminium foil and bake for 2 hours in a medium hot oven, turning every 30mins.
  5. Remove foil, brown both sides under a hot grill, keep to the side for 15mins.
Prepare gravy with granules or with the juices from the roast and serve slices of lamb with chips, roast potatoes. The perfect accompaniments would be tomato salsa and hummus.
