Chicken Roast Zeera


A dry roast dish with lots of cumin!

Ingredients

2lb chicken pieces (with or without bones) cut into 2-3 inch cubes
4oz butter
touch of salt
2 tbs fresh/bottled lemon juice


Method
  1. Wash and drain the chicken.
  2. Add butter into a saucepan or wok, melt fully and heat up, add washed chicken (no water).
  3. Add salt and cook on medium heat for 15 – 20 mins, stirring occasionally until chicken is cooked through.
  4. Increase heat so the chicken pieces start sticking to the bottom of the pot and only the butter remains. Stir a couple of times and switch off.
  5. Place chicken pieces on serving dish, discard the butter.
  6. Coarsely grind 2 tbs roasted cumin and add to the chicken, add 4 tbs freshly sliced green coriander and 2 tbs crushed green chillie (omit for mild).
Squeeze fresh lemon juice and serve with a crisp salad or Lentil salad.
