Chicken Cornflakes


This is a recipe from one of my cousins residing in Saudi Arabia, it is very easy to make and can be eaten hot or cold.

Ingredients

2lb chicken cut into 8 pieces (with or without bones), wash and drain in a colander
2 cups cornflakes
1 tbs garam masala
1 tbs (reduce to taste) red chillies
1 tbs salt (or to taste)
1 cup cooking oil (for healthy alternative use Olive oil)

SWITCH ON OVEN TO MEDIUM HEAT GM 5/6

Method
  1. Add cornflakes into a plastic bag, crush with a rolling pin (or run in a food processer) – until coarsely ground. Add dry spices, mix well and remove into a flat plate.
  2. Dip chicken pieces in oil, then press into cornflakes mixture and press down until fully covered with dry mixture. Cover each piece of chicken and place in an ovenproof dish.
  3. Place the dish in the oven and bake uncovered for 30mins, turn over each piece with a tong and return to the oven for a further 15mins or until chicken is fully cooked.
Serve with mashed potatoes or potato wedges and the Dry Plum Chutney.
