Mince toasties


This is another Kenyan recipe, mostly made in Ramadan

Ingredients

1lb kebab mince mixture (as per kebab rolls recipe)
sliced bread cut into two
oil for shallow frying

Method
  1. Add the egg to mince mixture and mix well.
  2. Coat one side of bread generously with mince (use a knife) and places mince side up in a plate until all of the mince is used up.
  3. Heat oil to medium, shallow fry a few slices at a time in a non-stick pan, plain side first, turn over and fry other side until golden brown.
  4. Remove into serving plate.
Serve with avocado chutney and carrot pickle.
