Chicken Infused with Lemon and Lime


I actually saw this on a cookery programme on the telly during a mother and son competition. The son had a favourite chicken dish that he made for the family and was a hit with me too!

Stage 1

Ingredients

4 sliced fillets of boneless chicken
1 tsp salt (or to taste)
2 tsp ground black pepper or 1 tsp chillie flakes or 4 crushed fresh green chillies

Method
  1. Lay the chicken fillets in a plastic bag one at a time, use a rolling pin or meat mallet to flatten them out. Sprinkle with the salt and pepper/chillies and marinate in the refrigerator for 2 hours or overnight.
Stage 2

Ingredients

1 cup finely sliced fresh coriander
1 lemon, juice and zest
1 lime, juice and zest
2 tsp finely grated fresh garlic
2 tbs olive oil

Method
  1. In a large shallow dish, mix together the lemon and lime juice and zest, coriander and garlic.
  2. Coat the chicken fillets with the marinade then cover and chill in the fridge for at least an hour. (if you prefer a stronger lemon taste marinade for 4 hours or overnight).
  3. To cook the chicken, preheat a griddle pan or non-stick frying pan over a high heat, coat the pan with a thin layer of olive oil and lay out the chicken fillets in the pan.
  4. Cook for 5 minutes on each side, or until charred on the outside and cooked through.
  5. Or barbeque on hot coals, 3mins on each side!
Serve on a bed of garlic and sweet corn mashed potatoes with a fresh mixed salad or with boiled new potatoes flavoured with chillie flakes, butter and salt and a fresh mixed salad or with chips if you are not calorie counting!
