Beef Salad


My sister-in-law made this delicious and healthy salad for us over Christmas 2007.

Ingredients

2oz sliced red onion
1lb fresh baby spinach leaves
1 cup mushrooms cut into quarters
half cup pecans or walnuts or cashews
1lb good quality steak, cut into long thin slices
3 tbs soya sauce
2 tbs cornflour
half bunch sweet basil leaves
1 tbs good quality chillie sauce (omit for mild)
1 tbs freshly crushed ginger
1 tbs freshly crushed garlic
2 tbs readymade Thai green curry
Enough Olive oil to stir fry the steak

Method
  1. Mix the cornflour and soya sauce, apply to steak and marinate in refrigerator for 1 – 2 days.
  2. Put the Olive oil to a deep wok, add the garlic and ginger, stir fry on a high flame, add the basil leaves, chillies and green curry paste.
  3. Cook together for 2 -3 mins, add the beef and stir fry on a high flame for a further 3 – 4 mins until beef is cooked through.
  4. Let cooked mixture stand for 5 minutes.
  5. Spread the spinach on a large serving platter, sprinkle the red onion slices and mushrooms then place the cooked beef on top of the spinach.
Garnish with warmed pecan nuts and serve whilst hot.
