This is a very healthy refreshing Middle Eastern salad which I had at a restaurant in Edgware road, London and thereafter learnt the recipe by trial and error.

Ingredients

1 bunch parsley
8 oz spring onions
1 cup fresh mint leaves
8 oz fresh tomatoes
1 cup dry couscous (cooked as per instructions on pack)
4 tbs freshly sliced coriander (optional)

for dressing
2 tbs lime juice
Salt to taste
2 tbs olive oil
half tsp crushed black pepper

Method
  1. Finely slice parsley as thinly as possible, wash in plenty of cold water and drain in a colander. Transfer into a salad bowl.
  2. Thinly slice the spring onions, fresh mint leaves and dice the tomatoes into tiny pieces, add to parsley.
  3. Mix the ingredients for the dressing in a separate bowl, add to the salad bowl, mix well with a wooden spoon, refrigerate for 3 hours.
This salad goes very well with bbq dishes and with burgers.
