Apple and Banana Salad


My neighbour made this for one of our gatherings.

Ingredients

1 medium sized crisp lettuce thinly sliced
8 oz celery thinly sliced
2 red/green apples cut into 2 inch pieces with skin
half cup raisins
half cup raw peanuts or walnuts (optional)
2 ripe bananas sliced

for dressing
4 tbs plain yoghurt
4 tbs mayonnaise
2 tbs honey
salt and pepper to taste

Method
  1. Place lettuce, celery, apples, raisins, nuts and sliced bananas in a deep bowl and mix well.
  2. Mix the dressing ingredients in a separate bowl and add to the above ingredients.
  3. Mix well with a wooden spoon, cool in the refrigerator 3hours.
Serve as a side salad with any starters or as ‘filler’ with a main dish or a rice dish.
