Avocado chutney


This is an excellent accompaniment for crisps and tacos but also goes well with Chicken Cornflakes and Lamb chops with tomato puree.

Ingredients

4 ripe avocados
2 tbs fresh lime juice
1 crushed green chillie or a touch of red chillie powder
1 tbs freshly chopped green coriander
1oz finely chopped onion

Method
  1. Cut the avocados in half, gently remove the stone (and discard), peel and place in a blender.
  2. Add the lime juice, chillie, coriander and onion.
  3. Blend until all of the ingredients are well mixed.
  4. Cover with cling film and keep in the refrigerator for 30 mins.
  5. If a blender is not handy, finely chop all ingredients and mash with a fork.
